Ingredients
- 1/2 kg prawns cleaned and de veined
- 1 tbsp. chilli powder
- 1 tbsp. coriander powder
- ½ tsp. turmeric powder
- 1 ½ tbsp. garam masala powder
- 1 tbsp. oil
- ½ tsp. ghee
- 2 cups basmati rice
- 2-3 green chillies
- 1 ½ tbsp. ginger crushed
- 1 ½ tbsp. garlic crushed
- 2 onions large julienned
- 2 tomatoes
- 1 tbsp. tomato paste
- Salt to taste
- ½ stalk curry leaves
- A bunch of coriander leaves
In a bowl, combine prawns with 1 tsp. chilli powder, 1 tsp. coriander powder and ¼ tsp. turmeric powder and 1tsp. pepper powder. Fry the prawns in 1 tbsp. oil and ½ stalk curry leaves and set aside.
Cook rice in 4 cups of water with ¼ tsp. turmeric, salt, 4 cardamom pods, 1 inch cinnamon stick, 3-4 cloves and 2 bay leaves. Set aside.
In a non-stick pot, add 2 tbsp. oil and 1 tsp. ghee. Add onions and sauté till translucent. Add ginger, garlic, green chillies and sauté till cooked. Add chilli, turmeric and coriander powder and garam masala powder. Saute till oil oozes out. Add tomatoes salt & tomato paste with 4-5 tbsp. water and cook until tomatoes are done. Add in the prawns and cook for about 5 minutes. Add rice and coriander leaves and 1 tbsp. lime juice. Mix well. I served it with some Date Pickle …Enjoyy !!!
