To begin with my initial thoughts over this next dish (once again courtesy of my mom) was that it was a complicated one. However once I started with it, I figured out that all these thoughts were unfounded for. This one is best tasted when served with plain rice/ roti/ pulao.
Ingredients
- 500 gms chicken
- 2 tbsp. soy sauce
- 5 tbsp. corn flour
- 1 tbsp. rice flour
- 1 tsp. sugar
- Salt to taste
- 1 tbsp. vinegar
- 5 tbsp. veg oil/sesame oil + 1 tbsp.
- 1/3 cup ginger julienned + 2 tbsp.
- 1 tbsp. garlic paste
- 1 large onion ( paste)
- 4 tbsp. green chilli paste
- 1 tsp. chilli sauce (optional)
- A few chopped coriander leaves
- 2-3 dry red chillies
- Few sesame seeds to garnish
In a bowl, mix the chicken with corn flour, rice powder, soy sauce, sugar, salt and vinegar.
In a non-stick pan, add 5 tbsp. oil and shallow fry the chicken until cooked on a low flame. Add ginger and and garlic paste. Saute for a minute or two. Add onion paste & green chilli paste & chilli sauce if using. Cook till the onions turn slightly brown. Add coriander leaves and mix.
Check for salt. If u feel like adding salt, add a little bit of soya sauce. Remove from flame. Heat 1 tbsp. oil in a pan and add 2 tbsp. ginger and dry red chillies and fry until chillies are done. Pour on top of the curry and garnish with some sesame seeds.
